Coconut vinegar is a natural alternative to traditional vinegar made from the sap extracted from coconut blossoms. Sugar is naturally fermented into ethanol by the addition of yeast. The oxidation into acetic acid provides the deliciously tangy taste. After months of fermentation, the vinegar has a pale yellow to light brown colour. It can be used liberally in salads, dressings, sauces, and other dishes to add a distinctive taste profile. Naturally fermented in small batches at source, it is available in glass bottles or bulk, normally as organic.
